Description

Easy, sugar-free Salsa Chicken recipe. A clean, high protein recipe made with fresh salsa and simple ingredients – perfect for abstinent eating and recovery-friendly meal prep.


Ingredients

Units Scale
  • 1 Tbsp. ground chili powder
  • 1 tsp. ground cumin
  • 1 tsp. salt
  • 1/2 tsp. onion powder
  • 1/4 tsp. garlic powder
  • 2 pounds boneless, skinless chicken (breast or thighs); rinsed and patted dry
  • 1 white onion, sliced or chopped
  • 16 oz. salsa of choice (we like green salsa, but any salsa will work well)
  • Cilantro, chopped onion, sliced jalapenos for serving, if desired

Instructions

  1. Combine all of the dry spices together.
  2. Sprinkle the spices evenly over the chicken pieces, rubbing each chicken piece to coat.
  3. Place the sliced onion in the bottom of a crockpot.
  4. Place the spiced chicken pieces on top of the onion.
  5. Pour the salsa over the chicken.
  6. Cook on LOW for 6 hours.
  7. When chicken is cooked through, shred with a fork. Serve and enjoy!

Notes

  • This chicken goes very well with our Air Fryer Taco Shells.
  • Can be made ahead and reheated for easy weeknight dinners.
  • Double check the label to ensure that your salsa does not contain any sugar or flour ingredients.
