Crispy, Easy, and Flour-Free

When I first gave up flour in recovery, I thought tacos (one of my favorite foods) was off the menu forever. No crunchy shells – how would I ever survive another Tuesday again?

Then I discovered how easy it is to make crispy, golden taco shells in the air fryer using corn tortillas – and Taco Tuesday could be enjoyed once more.

These shells are abstinent friendly, made only from whole corn tortillas. (Make sure to check the labels on your tortillas – make sure they contain only corn, water, and lime). No flour, no sugar, and no sneaky triggers.

Just pure, crunchy satisfaction – the kind that fits perfectly into a food plan that’s simple, sane, and compliant.

Air Fryer Taco Shells

Description

Every abstinent meal is a celebration and opportunity for choice, structure, and freedom. These crispy taco shells are proof that life can be delicious AND abstinent.

2 corn tortillas is usually 1 starch serving


Ingredients

  • 100% corn tortillas (check the ingredients – corn, water, and lime only – no flours)
  • Avocado or olive oil
  • Pinch of salt or chili powder, if desired

Instructions

  1. Warm the tortillas: Microwave for 15-20 seconds or until pliable. (This helps them fold without cracking).
  2. Oil (Optional): With a pastry brush, lightly brush each tortilla with oil. Sprinkle with salt or spice, if desired.
  3. Shape the Shells: Lightly drape each tortilla over two bars of your air fryer rack.
  4. Air Fry: Cook at 400 degrees for 6-8 minutes, until golden and crisp. Time may vary based on your air fryer.
  5. Cool: Remove from the air fryer and let shells rest for 1-2 minutes to finish crisping.
  6. Fill: Fill your taco shells with your choice of protein: salsa chicken, beef fajitas, carnitas, or turkey taco filling, veggies: shredded lettuce, tomatoes, onions, jalapenos, salsa, and healthy fatcheese, avocado, or sour cream. Enjoy!

Notes

For variety: Air fry the corn tortillas flat, for tostadas; or cut into wedges to make chips.

Tips for Recovery-Friendly Tacos:

  • Keep it simple: Load your taco with lean protein, veggies, and healthy fats.
  • Stay mindful: Notice how satisfied you feel when you eat slow, planned meals.
  • Serve with veggies: Add a side salad, pickled carrots, or fajita veggies for a rounded, abstinent meal.

Be Mindful: For some people, “crunchy” can be a trigger; please be mindful, and avoid if you feel like this recipe might become a red-light food for you.

In food addiction recovery, we avoid substances that trigger the mental obsession – like flour and sugar – but that doesn’t mean we have to give up all the joy or flavor.

These corn taco shells are naturally gluten-free and flour-free. They are made from whole, simple ingredients that nourish the body while keeping you in alignment with abstinence.

However, please be mindful and cautious with this recipe. For some, this recipe could potentially be triggering. Only you can decide for yourself whether you can successfully incorporate this recipe into your abstinent plan, or whether it might be a trigger for you.
