Description

A warm and quick breakfast. Appley Oats are a reminder that recovery can be simple—and that simple is enough.


Ingredients

Units Scale
Base:
  • 2 eggs, beaten
  • splash of water
  • 1 oz. oats
  • 5 oz fresh, raw apple, chopped
  • 1 oz dates, chopped
Toppings:
  • 1 tsp butter, or 1 Tbsp toasted chopped nuts
  • Cinnamon or Apple Pie Spice, to taste

Instructions

  • Whisk the eggs and water in a microwave safe bowl.
  • Add oats, fresh apples, and dates. Stir to combine.
  • Place bowl in microwave; cover with a paper towel.
  • Microwave on HALF POWER (50%) for 4 1/2 to 5 minutes. Stir half way through cooking.
  • When cooking is complete, top with either butter or toasted nuts and cinnamon, if desired. Serve immediately.

Notes

  • VERY IMPORTANT: cook this on half power only.
  • Microwaves vary; if you need additional cooking time, do so in 30 second increments.
  • Don’t have apples or dates? Fresh peaches or fresh pears work very well, too.
  • You can substitute additional apples or other fruit for the dates, as desired.
