Description
This easy grilled zucchini recipe is the perfect healthy summer side dish. Quick to make, full of flavor, and perfect for BBQs, meal prep, and a great way to use up that extra fresh garden zucchini.
Ingredients
- 3–4 zucchini squash, washed and trimmed
- olive oil
- salt and pepper
Instructions
- Slice the zucchini lengthwise into 4 slices each.
- Lightly brush each side of cut zucchini with olive oil; season with salt and pepper to taste.
- On a hot grill, place zucchinis across the grates; allow to cook for 2-4 minutes per side, until charred and cooked.
- Remove from heat and serve.
Notes
- For color variety, vary the zucchinis with yellow crookneck squash.
- Instead of placing the zucchini slices on the grill directly, you can use a grilling basket; for variety, cut zucchinis into chunks instead of slices.
- Pairs very well with grilled red onions, grilled peppers, and grilled mushrooms
- Leftovers make delicious additions to salads or bowls.
