Description

This is a refreshing and flavorful salad dressing option for Mexican-inspired salads. This versatile dressing can also work as a sauce over a dinner of grilled meats and veggies, over eggs for breakfast, and even as a dip for crudites.

Ingredients

Units Scale
  • 1 bunch of fresh cilantro, rinsed, dried, and chopped
  • juice of two fresh limes
  • 1 fresh, raw jalapeno pepper, seeds removed, chopped
  • 1/21 clove of fresh garlic, minced
  • 2 Tbsp olive oil
  • 1/2 cup of sour cream
  • 1/41/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp onion powder

Instructions

  1. Combine all ingredients. Mix or blend to combine.
  2. If a smoother dressing is desired, combine ingredients in a blender or in an immersion blender cup; blend until smooth.
  3. Taste, and adjust seasoning, as desired.
  4. Keep refrigerated in an airtight jar; will keep 5-7 days.
