Ingredients

4 large russet potatoes

Instructions

  1. Preheat oven to 400 degrees.
  2. Scrub potatoes to wash off any dirt; rinse and pat dry.
  3. Cut potatoes in half, if desired. If not cutting in half, prick with a fork several times.
  4. Place potatoes on a baking sheet lined with parchment paper.
  5. Bake for 50-60 minutes, until a knife inserted into the center of a potato can easily penetrate.
  6. Remove from oven, slice open, and top with your favorite toppings.

Notes

Top with your abstinent friendly fats.

Sprinkle with fresh herbs or top with salsa.

Leftovers can be reheated, and go well with eggs or cut up in salads.
