Description

Tender strips of seasoned beef, colorful bell peppers, and onions come together for a quick, protein-packed dish that fits perfectly into your abstinent lifestyle.


Ingredients

Units Scale
  • 1.5 pounds of flank steak
  • 2 Tbsp. avocado oil or olive oil
  • juice of two fresh limes
  • 2 tsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • spray of avocado oil
  • 3 bell peppers of varying colors, sliced
  • 1 white or red onion, sliced
  • 2 garlic cloves, minced

Instructions

  1. Rinse the flank steak, and pat well to dry.
  2. Mix oil, lime juice, and spices together until well mixed.
  3. Marinate the flank steak. Coat the steak with the marinade, ensuring all sides are coated. Let rest for a minimum of 30 minutes in the refrigerator, or up to 2 days for a deeper flavor.
  4. Preheat the cooking surface:  Heat a grill or skillet to medium-high heat.
  5. Cook the steak: Place the marinated steak on the hot grill or skillet and cook for 5 minutes on each side. Adjust the time for your preferred level of doneness. Do not overcook. Set aside and keep warm, allowing the steak to rest while you cook the veggies.
  6. Cook the veggies: In a grill pan over a grill, or in the same skillet, spritz with avocado oil and then immediately add the bell peppers and onions. Stir or flip occasionally, until the edges are charred slightly. Add the minced garlic and stir for about a minute.
  7. Slice the steak against the grain to ensure tenderness. Serve immediately for a delicious meal!

Notes

  • Serve in our Air Fryer Taco Shells, or over a bowl of Brown Rice.
  • Top with cilantro, salsa, avocado, sour cream or cheese – whatever fits into your abstinent food plan.
  • Leftovers are fantastic over salad with our Cilantro Lime Dressing.
  • Add variety with veggies – zucchini and yellow squash are great additions!
