Sugar Free, Flour Free, Recovery Friendly
Okay, let me tell you about this gyro salad, because it hits that sweet spot where food feels both comforting and satisfying, without waking up cravings or blowing up your recovery.
This gyro salad is one of my favorites. It is one of those meals that fires all the synapses, yet is healthy and abstinent. That’s why this recipe lives on repeat in my kitchen. It has all the flavors you love from a traditional gyro: garlicky, herby, rich, and fresh, but without the pita, the sugar, the flour, or the obsession spiral that usually follows.
At Abstinent Kitchen, we are not at all interested in white-knuckling our meals, or pretending we don’t want delicious food. Recovery food can actually feel good to eat. This gyro salad does that. It’s filling and balanced in a way that lets your body and brain relax. You eat it, you’re satisfied, and you move on with your day, fully satiated. No mental tug-of-war required.
And the tzatziki sauce? Don’t even get me started. It’s creamy, herby, and cooling – exactly what you want with all those Mediterranean flavors, but it’s made in a way that supports recovery. No sneaky sugar, no sweetened yogurt, nothing that quietly lights up the obsession. Just simple, real ingredients that do their job and taste amazing while they’re at it.
I usually serve the warm, seasoned meat over crisp greens, quinoa or brown rice, sliced cucumber, perfectly ripe tomato, and sliced red onion for crunch. Drizzle with our balsamic dressing and a scoop of the tzatziki sauce on top. This is a simple meal that feels wildly abundant without being chaotic, which is kind of a dream in food addiction recovery.
This recipe is a fantastic option for meal prepping. Everything keeps beautifully in the fridge. Just make sure to keep the dressing and the tzatziki sauce separate from the greens until ready to eat.
This gyro salad is a reminder that recovery isn’t about punishment or deprivation. It’s about rebuilding trust with food and with yourself.
You still get to enjoy big flavors.
You get to feel satisfied and full.
You get to eat in a way that supports the life you’re creating. And it’s absolutely ok to enjoy how you feel after you eat a healthy, abstinent meal.
This recipe is a win, every single time.

Ingredients
- 1 pound ground lamb
- 1 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1 tsp. dried oregano
- 1 tsp. dried onion powder
- 1 tsp. dried garlic powder
- 1/2 tsp. cumin
- 1 medium sized cucumber, peeled, shredded, and as much liquid squeezed out as possible
- 1 cup plain Greek yogurt
- 1 fresh garlic clove, minced
- 1 – 2 Tbsp good quality olive oil
- 1 1/2 teaspoons of fresh lemon juice
- 1/2 – 1 Tbsp. fresh dill, or 1 tsp. dried dill (or to taste)
- 1/2 tsp. onion powder
- 1/2 tsp. salt (or to taste)
- 1/4 tsp. pepper (or to taste)
Instructions
Gyro:
- In a medium bowl, add lamb, salt, pepper, oregano, onion powder, garlic powder, and cumin. Mix with your hands until very well combined. At this point, you can either proceed to cooking the meat, or let sit overnight covered in the fridge, to allow flavors to combine.
- Preheat the oven to 350 degrees. Line a rimmed baking sheet with parchment paper or foil.
- Transfer the meat mixture to the center of the baking sheet. With wet hands, for the meat into a rectangle, roughly 8 inches long, 4 inches wide, and 2 inches high.
- Bake for 35 minutes. Remove from the oven. Transfer to a cutting board. Allow the meat to rest for 15 minutes.
- Adjust the oven rack to the highest position, and preheat broiler.
- Carefully slice the meat into 1/4 inch thick slices. Arrange the slices on the rimmed baking sheet. Broil 2-4 minutes, until slices are hot and the edges are crispy. Turn over the slices and broil again for 2-4 minutes.
- Serve over a salad of fresh greens, perfectly ripe tomatoes, sliced red onions, and quinoa or brown rice. Top with balsamic dressing and tzatziki sauce.
Tzatziki Sauce:
- Combine all ingredients in a medium sized bowl.
- Cover and refrigerate at minimum 30 minutes (I make the tzatziki first, then let it cool while the gyro cooks.
- This sauce is great with gyros. Can also be enjoyed with grilled veggies, grilled meats, or on a baked potato.
Notes
- Cooked gyro meet can be stored in an airtight container for up to 3-5 days in the fridge, or up to 2 months in the freezer.
- Tzatziki can be stored in the fridge in an airtight container for up to 6 days. If the yogurt mix seems to separate, you can give it a good stir to reincorporate.
- This works great as a meal prep option, just store dressing and tzatziki separately from salad until ready to serve.
- We count 1 ounce of tzatziki as one fat serving.
